Abstract

A proteinase with milk clotting activity was isolated from the (nontoxic) stem of Dieffenbachia maculata (a plant of the Araceae family widely cultivated in India). Optimum pH for milk clotting activity by the enzyme was 5.5 with negligible activity at pH 9.00 and 10.00. Optimum temp. was 45
