Abstract

Seedling mangoes are used for two purposes
in India: (1) they are eaten in the
ripened state and (2) they are used for
the preparation of various types of chutneys
and pickles. Because of the higher
prices which they fetch in the market, far
greater attention has been paid to the investigation
of the optimum cold storage
conditions for grafted varieties of mangoes
as compared to the seedling mangoes
(1-7). Seedling mangoes intended for
consumption in the ripened state are
usually allowed to ripen on the trees and
their long-term storage is rarely attempted.
However, in the case of seedling
mangoes intended for the preparation of
chutneys and pickles the question of their
preservation in a state in which they can
be easily converted into these products
is of considerable importance, especially
from the point of view of canneries. It
may be mentioned here that factoryproduced
mango pickles and chutneys
not only have a good home market but
are exported in appreciable quantities.
Since the seedling mangoes suitable for
the preparation of these products are
available only for a short period during
the season, it is important that attention
be paid to the various methods of preservation
of green mangoes in a condition
suitable for this purpose. This problem
is being tackled at this Institute from two
angles- (1) cold storage of green mangoes
and (2) freezing of slices of green mangoes.
The data obtained so far in connection
with the former enquiry only are
reported in this paper.
