Abstract
Quality control of eggs and egg products is discussed with reference to: the problem of eggs with dirty shells; preservation of shell eggs; cold storage of shell eggs; investigations on the microbial contamination of shell eggs; improvement in transport and packing of shell eggs; studies on the composition and nutritive value of eggs; production of dried egg products; canned egg products; and studies on functional properties of eggs and egg products. Aspects of poultry production are also considered, including: the advantages of fewer but bigger farms; integrated operation of poultry production units; improvements in the processing technique; transportation of live and processed chicken; packaging of dressed poultry; storage studies on dressed poultry; development of different chicken products; marketing of dressed poultry; and bacteriological condition of retail dressed poultry.
